"Bread Pudding"

I've never been a fan of bread pudding, because to me it tasted like soggy bread. I don't think I've even tried it again as an adult. My mom has always been a fan of the squishy bread concoction. She found a recipe she wanted to try, and I told her that I wanted to blog about it if it turned out yummy.



So, here is the recipe that we used that came from my mom's friend on facebook...passed down 3 generations.

6-8 left-over biscuits or 10 slices bread
1/2 cup flour
5 eggs
1 large can evaporated milk
1 3/4 cup sugar
2 tsp. vanilla
1/2 cup buttermilk
1/4 tsp. nutmeg
1 tsp. cinnamon
1/4 cup melted butter

"Crumble bread into small pieces. Mix all ingredients in large bowl with a large mixing spoon. You will probably need to add a little milk to get the right consistency. You don't want it too thick and you don't want it too thin. It will look like a lumpy cake mix once all mixed together. Pour into a greased 9x13x2 baking dish. Bake on 350 for about 45 minutes (according to your oven). It's called bread pudding, but it's more like bread pie. Cool slice and eat. It's much better when completely cool. Hope you enjoy. You may have to play with the recipe to get it just like you like. That's what I do and I don't really measure but I think this will work for you. It should be moist with a little spungie texture."


We didn't end up having to add any milk.

We followed all of her advice except, we baked it in a muffin pan. It yielded 26 muffins. The texture didn't bother me. I guess that was a childhood thing. They turned out to be really tasty!

  4. It did turn out really well. But next time I think we can leave out the cinnamon and nutmeg and see how that goes. Love Mom
